Mike,
The handbrake is no problem and easy to fit under the dash.
There were two types of original handbrakes -
The Ford Zephyr MkIII, a pull handle type or the stronger Ford Anglia lever version fitted horizontally but in my view this is ugly and takes up a lot of space.

Frank Catt has done a lot of work fitting original shifters to the side well and a thread was started recently.
Relocation of the shift heavily depends on whether you are going for universal linkages or cables to shift your gears.
