Hi Phil
Had the same idea as yourself with the wind down legs at the caster end. Makes it a very stable work platform with the ability to level the chassis as well.

I agree Frank, Thats why I built mine 16 inches tall, that way jack stands can be placed under it , the car raised with a floor jack and then reset down on the jack stands,and the dolly removed (so you can for instance work on a area where the dolly is in the way). This also makes it easy to get back on the ground. I have two plastic stools , each a different height , that I can sit on to work on the car from the side, and I can easily work under it from this height also . If your more than 16 inches thick you shouldnt be owning one of these cars anyway. Also I suggest using steel angle, or tubing.
If you get the car too high you will also have trouble reaching areas "in the center " of the front clip or say the engine compt. , just my two cents.
