What thickness, quality like hardness (ex. Al 6060-T6), finishing (anodizing) aluminium are mostly used to cover chassie frame or as someone will call it as monocoque ?

.050 works well and if you need a little extra thickness .060 works well as does .040 in some areas. In metric try 1.2mm which is very close to .050 These panels can be coated with powder coating or ceramic to match the chassis.
