Looking to purchase a floor mounted pedal assembly in my RHD Southern GT chassis. Does anyone have recommendations on ratio's and what they like or did not like.

Have a look at this link: Wilwood Disc Brakes - Pedals Description , a really well made and compact assembly. You need all the space you can get for larger shoe sizes and also clearance to the steering column and steering rack.
On the website there are guides to assist in master cylinder selection based on your brake caliper and clutch slave cylinder specs. The pedal set has two choices of pedal ratio as well. There is also a drive by wire throttle version...
