I would have to agree with the vents ,I made larger vents in my 40 when I made the alloy body and it made a difference.

Where is the fan switch located.
I know its only since the new engine but it does make a difference.
If the switch is in the radiator its a long way from the engine.

That photo was taken on the car when it had a fibre glass hood, without vents. The car has a hood with vents today.
The coolant fluid is a 50/50 water and anti freeze(Glycol) and a bottle of water wetter.
Yes it's a Fontana block with AFD heads from "Down Under" as mentioned...

Solution/test
I have to disconect the bypass function, remove and test the radiator and fit 14" fans insted of the 12" and still use the 160F t/stat. Mayby there will be a shroud too.

Although it will be extra work, consider going to a 20%-25% anti-freeze mixture during the summer. It will cool significantly better than your 50% mixture.
