Get yourself a piece of glass, a picture in the frame will do, and a sheet of 300 grit sandpaper. place paper on glass and wet with some clean water. Place housing machined surface face down on sandpaper and do figure 8s until smooth. All done.

Another way to look at this might be to clean up and separate the major pieces. Then photograph and offer for sale as replacement parts for others with a more complete project. Very little investment to do so and you might come up with more money than the value of the project as is.

I left out the run on controller. If you have a manufacturer document on it I can look it that and include it if you like and it will work. Frankly, I don't think you need it. Just let the car cool down a bit before you turn it off.

My advice would be to put all the temp sensors in the intake manifold. The coolant temp target is the coolant temp at the hottest location in the complete system. That's the top of the engine, heads, and by extension, the intake manifold. The fan on temp would be selected to be about 10F above...

It might be helpful to design in a range of adjustments instead of what the best guess might be as a final setting. As far as camber goes, you won't want it to go pos but might want to add neg. camber at some point. So I think if you can adjust from 0 to about -3 degrees you will be fine...
