I bought Holman-Moody covers for my car. They come gray with natural fin tops but you could call them about painting them with black. I also think they should be something period that set it apart from Cobra covers.

Hi Vinax, the header sets are made to fit with the engine and transaxle you are planning to use. I know Race Car Replicas offers sets to fit with ZF, Audi, and Ricardo tranaxles.
It is not a KCC chassis. It really looks like a scratch-built chassis with the previously mentioned Mustang II/hot rod front suspension and what looks to me like a C4 Corvette rear suspension. Doesn't look like a bad chassis. The foam windshield may be to keep the roof section from sagging...

I think that the Kellison GT40 replicas were patterned after the original prototype big block cars GT106 and GT107. They had extended nose sections that were thought at the time to help with air stream penetration.

I've not used it, but an idea would be closed-cell foam tape such as from 3M. I know it comes in different widths and thicknesses and should be a decent sealing material.
