I perused a couple of other hot rod web sites on the topic of leaking banjo bolts. Most leaks seem to involve a leak around the banjo and the copper washers themselves.

So the question is, will any properly sized copper washer work, or are there purpose built copper washers designed specifically for sealing the banjo on the caliper mounting surface?

I'm not aware of any copper washer that was not made for sealing surfaces and fasteners.
They should not be re-used unless re-annealed and in good physical shape..
