Which brake fluid

If in doubt change the fluid ASAP.

Brake fluid absorbs moisture from the air and as the water content in the fluid increases the boiling point of the fluid lowers and the other critical problem is that as it absorbs water it then allows corrosion to begin in brake lines, master cylinders, slave cylinders which will end up costing dollars to fix.

Fluid manufacturers advise fluid should be changed yearly or sooner if contaminated.

The same as already in the system

Reason being some fluids are not compatable with some seals and if you get the wrong stuff you're replacing all the system seals

does everyone prefer. or recommend ? fluid in ours is a bit yellow, not sure if its burnt or just that color.

I use Castrol GT LMA mostly out of habit (very pale tan color). The SPF manual says "If the reservoir needs to be topped up, use DOT 3 or DOT 4 Brake and Clutch Fluid." which is advice I agree with. For all practical purposes that means "anything you are likely to find at a reputable parts store that is NOT DOT 5." (DOT 5 is not compatible with the others even in tiny amoutns, and has other issues, and you can spend days reading about that elsewhere on the web if you wish.)

BTW for purposes of brake fluid selection and maintenance our SPFs are no different from any other car.

Thanks All, not sure whats in the system as we bought it used. Thanks for the advice about the DOT 5. that is why I asked, did not want to put something in there that was questionable. will go check it out on the web! thanks again!
