Inlet manifold choice?

I have a pick of two, the Holley contender dual plane and the Weiand 2p 180 (also dual plane)
Not after top end power, more torque and tractability.
Any advice most welcome.

Either would be well suited for a docile package. You may be leaving a little on the table in terms of hp but you're already good with that. You might want to consider the Edelbrock Performer RPM Air-Gap intake. It's a bit taller but the open runner configuration will give you just a little better air/fuel density since it will run cooler.
Not that there's a lot of good ventilation on a Forty anyway...
