Vegas will normally be over-run, with the minor exception of major shows (like SEMA)/holidays/festivals/fights/movie filmings/etc... when it will be MOBBED. The good news is that it typically wouldn't matter how hot it is outside, as Vegas is meant to be enjoyed inside.
The Grand Canyon south rim is actually pleasant in the summer as it's at ~7000' (~2km). The north rim is ~8k' and even cooler- so much so that it's closed in winter due to snow. The further down you go, the hotter it gets- there may be snow on the rim and 90's at the river. If you're staying at the top, there are facilities year-round but the activities may be restricted in the colder months.
I was there in Nov and camped at the bottom with my dad for two nights. It was just about perfect, cool but not cold, although we did get snowed on while climbing out (it was just a dusting though). Pics HERE.
David - are you planning more of a coast trip or have you thought yet about how to connect SEA to GC? If you're up for a stop, I'd be happy to meet you anywhere but something tells me you'd enjoy stopping here- the WAAAM.

mainly a coast trip though my friend in Seattle will set up some drums of butchers offal to tempt the bears on the volcanoe area and I can finally get a shot at one.
After a night or two in the Seattle area we'll set course to your area. How do we get to the GC? Still working on it but probably Los Angeles - GC - then maybe Phoenix to San Diego and fly back home from there. I'm allocating about two weeks at the moment though our tickets on BA are quite flexible

This is exactly what I was thinking. It will be 20-30° F or so at night and probably 50-60° during the day. Probably no precip, but potentially overcast, and snow will likely limit hiking below the rim, and possibly access along it at the top as well. You'll still be able to view it from the top and it can be gorgeous with a coating of snow over all the other colors below.
I won't be joining there but I don't have anything currently on my schedule for that week or so prior for a visit Dave- other than work...
